In a lot of these cases they're not adding extra protein but just highlighting how much protein the food contains already. The 16g of protein in those noodles is mostly just gluten from the wheat.

The theory behind it is solid, most people need more protein in their diet.
But it seems that manufacturers can brand something as high-protein even if it doesn't have that much protein in it in absolute terms.
It also depends on how the protein is sourced, usually it's made from soya beans from China which isn't ideal, but the isolate is very cheap.
The future is going to be some form of sunflower and pea protein mix, it has the same or superior amino acid profile and digestibility of egg whites.
There are people who have a knee-jerk reaction at the mere thought of plant protein, but you're not eating healthier if you eat meat from industrial farms.

Cricket protein is made from the carapace of ground up crickets on paper this has a incredibly high protein count. How their carapace is structurally similar to your fingernails and is basically indigestible in our human guts therefor has a extremely low bioavailability.
