Building a modern (not-Russian) tank requires a complex industry with some very specific competencies. Europe and the US practically stopped building new hulls some 20 years ago, instead choosing to refurbish and refit old ones. It took Europe 4 years to restart real production of new hulls at about ~100 a year. The US is still at ~20.

Challenger 2 and Stridsvagn have done well in Ukraine are notable for being very heavily armoured even compared to Leopard 2 (which Stridsvagn is a modification of) and even Abrams. If anything it's smaller less heavily armoured Russian tanks that have fared the worst, unless they're up-armoured into absurd turtle tanks, which are ineffectual for other reasons but ultimately more or less impervious to FPV drones.
