In the north, you have to plan your food production and consumption carefully, you have to live a full year with whatever you manage to grow during the 3 month long growing season. Same reason our food is often considered bland, you're not going to waste whatever arable land you have on spices when growing enough food to get you through a full year is already a challenge.
