There are more costs associated with ships than just fuel cost. It doesn't make sense to use these anymore, unless diesel suddenly becomes like a thousand times more expensive.

Ships run on bunker oil. Sludge really. And the mileage is astounding.
You could convert every freighter to sail and save about enough oil to run all the cars for about a year. Not really worth it.
Plus sails and rope take oil to make. Not to mention the huge increase in crew you have to have, plus they are at the mercy of the winds making trade even less efficient.

because nobody is going to commission a sailing boat over a modern boat
it will take longer, is more risky, can't carry as much etc. You'd be limited by where the winds were blowing. Your first 10 jobs would be trash because you'd be rediscovering the unwritten operational knowledge that these sailors had.
The fractionally higher cost of fuel is much cheaper than the aforementioned.
Even when reserves stop getting tapped and we feel the full brunt of the biggest energy crisis ever, nobody will commission your wooden sailing boat.
