Packing the Supreme Court is constitutional and has happened multiple times in US history. If you try to pack the Court, they CAN rule it unconstitutional, and now you have a Constitutional Crisis
A supermajority of Congress (2/3) has the power to impeach and remove a Judge, so that is the de facto majority/political capital you need to pack, hence why even FDR failed to pack the SCOTUS
