There are a few much more ordinary explanations before “simulation” becomes the best one.

You probably just aren’t observing the full timeline:

they may shop at different hours than you notice
use delivery services
bring things in through a garage or side entrance
carry smaller loads over multiple trips
eat out a lot
have partners/roommates doing errands you don’t see.

Humans are also very good at noticing patterns that feel uncanny. Once your brain tags something as strange (“I never see groceries”), it starts feeling meaningful even if it’s just a coincidence plus incomplete observation.

There’s actually a concept in Frequency Illusion and related attention biases where the brain selectively tracks unusual absences or repetitions. You notice the missing grocery bags because it conflicts with your expectation of how life “should” look.

The “simulation” thought experiment itself comes from ideas like Simulation Hypothesis, but there’s no scientific evidence that ordinary oddities in daily life point to us living in a simulation.

Also, if you start looking for these moments, you’ll find endless ones:

never seeing coworkers commute
neighbors never seeming to sleep
always catching the same stranger at the same bus stop.

That’s mostly because we only see tiny slices of other people’s lives, then our brains fill in the blanks.

90% of people are gonna go to work and come straight home on most days. On the other occasions where you're leaving to go do something, you're probably not too mundful of what your neighbors are up to.
Not to mention mismatched schedules. Different days/times you tend to be active vs. them could mean it always happens at a time that you would never see it.

I have motion sensor CCTV pointing at three neighbors driveways.
In two years I have never seen or recorded them with groceries.
Occasionally they will have a KFC or McDonald's bag. But never groceries.

I used to have neighbors from hell. Neither of them worked (they didn't leave the house) and were bogan as fuck but bought like 10 cars, and a schoolbus(?). The dude would revs these cars literally all day and night for seemingly no reason. One time I was going for a walk and was annoyed so I flicked a small pebble into their garden. Like it was a video game they for some reason were vigilant that I did this, came out and had a go at me, then accused me of trying to kill their illegally held mass of chickens (literally like 100 of them in a tiny coop), which apparently their theory was that this pebble was being thrown at them to kill them (lol).
They then sold this house for $666,000 a few years later, and 1 week after that one of my family members got cancer.
