Distillation is not only inefficient but especially inefficient for the large scale needs of a data center. To distill requires heat to boil but then the distilled water needs to be cooled for submersion. In Sweden nuclear power plants use water to water cooling and the waste water from the heat exchangers gets pumped into a reservoir where it slowly cools and can seep back into the ground water, evaporate or do whatever it wants without much affecting the local area, with the exception of the reservoir of course.
The water in the reservoirs are typically 10 degrees centigrade above the surrounding water. If it feasible to do this from cooling more than 3000 MW energy production then this should also be feasible for data centers, at least in many areas.

The setup is costlier but the costs once set up should be lower than water evaporation.

What your pic shows is done at many farms. The EROI is about 1, so if you'd otherwise release it into the atmosphere then that would probably be a better option. If you'd be forced to deal with the methane in some way than capturing it for later energy use is probably your best bet.

Selling this as a green alternative to the natural cycle is a scam, still as a farmer you should 100% do this if you get it subsidized or can sell your methane at a premium since it has a natural origin.

The short answer is money. A purely air-cooled closed loop cooling system would work but that means spending more money and space on a huge reservoir, larger heat exchangers and electric fans.

Most builds going up use evap cooling, which sprays water on closed loop radiators fed from smaller reservoir of novec or other engineered fluorocarbon liquid. Can't use waste water cuz it'll foul up the pumps and probably corrode everything. They probably pre-treat the water with a bunch of chemical softeners and corrosion inhibitors that make it too toxic for drinking so whatever drains out has to be wastewater.

That would require cooling the vapor, defeating the whole purpose.
You can't get rid of heat, you can only move it and they use the water vapor to move heat from the data center to the atmosphere.

The only alternatives are pumping heat into lakes or the sea/ocean, which is also done but can have environmental issues.
Or using radiators to pump the heat into the air without evaporating water, but that's far less efficient and basically impossible on an industrial scale.
