There is no "Judeo-Christian" civilization; there is an Abrahamic civilization. Muslims had infinitely more impact on European philosophy than Jews, with philosophers like Thomas Aquinas drawing inspiration from the Andalusian debates between Ash'arism and Mu'tazilites.The term "Judeo-Christian" originated in Israeli propaganda of the 1960s, with films like Leon Uris's Exodus.

Abrahamic memetics just usurped Rome because with Jesus they were able to latch on to the suffering majority that, as soon as they united under one faith, eventually had more power than the Italian machos who worshiped Jupiter. But worshiping a rabbi doesn't change what Europe fundamentally is. Europe is of the European who built Athens and Rome; Arabia is of the Arabian who built Babylon and Carthage.
Note they made the jews in that movie as white as possible. If "Exodus" were about anything other than Jews vs. Arabs, it would be considered one of the most racist, condescending and propagandistic books of the 20th century.
Western Civilization is the civilization that the Catholic Church built (and the Protestants divided/inherited). Everything you see around you (especially if it is good, well-ordered, revivifying, etc.) is the work of the Catholic Church directly/indirectly. Everything that is bad in this civilization is where we have deviated from the Church. (Also, when you’re playing Sid Meier’s Civ Vi, you will come to the realization that basically all the traits/benefits of your created religion that you can choose are, in real life, the traits/benefits of Catholicism and infinite more that aren’t in the game.)
