Gunther already was monster pushed whoever he'd feud with. He'd already retired Goldberg and no one cared. He already has his whatever record as IC champ. He's already as over as he'll ever be. He's liked because of what he can do in the ring, no one really cares about his character which is very poorly defined anyway. He used to do chickenheel shit, he'd wear skinny jeans and nazi coats, now he wears a boxer's robe and a trench and is chubby again.
What I'm getting at is LA needed it more for his character, and he's a perfect fit to go vs Cena. Gunther could lose and he'd still be getting the same reactions, LA has been needing a break since forever. But it's whatever, wrestling ended with Cody Roman II
