What I mean is that they interpret any statistical bias to an extreme degree, maximizing the bias until the total probability is either 0% or 100%, never in between. For example here we see OP interpreting "tall men have an easier time dating" as "short men have a 0% chance of finding a woman and tall men have a 100% chance of finding a woman."
