You can use those to make your own pistachio butter it just takes a long time for it to come together in the food processor. It look bad for multiple minutes before it smooths out then you can make dubai bars with it or put it on toast

Nuts are a pretty solid food yeah, but I mean if you're going to eat the entire bag then no matter if it's good or not it won't be good for you. Just make sure you drink plenty of water to offset the salt I don't know if they're pistachios are as salty as their peanuts but I find the peanuts too salty.
