Why do karmic religions act like I should care for my karma and where my soul will go on its next life if the "me" that matters will already be dead?

I think the point is your soul is "you" and your body is a vessel which contains it so saying your next is life is not "you" is wrong.

This question makes me think a bit... I don't know. I think I understand a little better the fear that buddhists have of samsara now. But still, if I were aware that this process of having my memory erased would happen tomorrow, for example, and that if I did something that gives me pleasure today, my new self of tomorrow would suffer, I think that I would still do it.

In the case of Buddhism, it's because your suffering won't be over for as long as you wander. Enlightenment is the real escape route, not death.

That would apply in Hinduism but not Buddhism since it teaches that there's no "Self", but rather says the "Me" that you refer as is a mix of different collisions and circumstances
