I think you should tell your mom that it bothers you that you keep missing each other like ships in the night. You need to keep your phone and airplane mode most of the time, but you don't want to miss her call. Ask her to text you to schedule phone calls. That way you are warned ahead of time and she doesn't have to worry that you won't pick up. I have this issue with my mom as well. She gets really sore if she can't reach me or if I'm unable to come after we scheduled a visit. You're her baby just be kind
