Unironically, Cowboy Bebop. It offers the best of character development, plot, and overall aesthetics, with possibly the best anime soundtrack ever made. It also ended itself tastefully without dragging out too far, with a satisfying and legitimate end that ties everything up,
But zoomers will tell you it's boomer anime becaue it was produced 20 years ago.
