a different point in the sky would have light that enters the telescope from a different angle.

the image is formed from the focusing of light to points in the area of the focal point.

Real answer:
You know that meme video with all the normies shocked to find their bathroom mirror can "see" an egg despite there being a piece of paper obstructing it?
The same thing is happening in the telescope.
Objects that you might assume to be obstructed by the secondary mirror are still visible on the primary mirror depending on the angle of incidence. The two mirrors are curved and placed in such a way that the image of the hole (and your own eyeball for that matter) is refracted to nothingness while the image of the light sources behind the primary mirror appear flat and magnified.

All parts of the image go through all paths to the focal point, to a very good approximation. You could remove all but a small piece of the mirror and it would still make roughly the same image, but much dimmer.
