I've been wanting to educate myself on the story of human evolution and all things adjacent, but I'm honestly not sure where to start desu. Any like, recommendations or something?

I'd say BOTH, archeology and serious genetic studies, don't trust anything they say, merely look at the data, there's insane amounts of muddying the waters in the field from multiple sides but specially from one

Read the Origin of Species and get a good understanding of natural selection, then learn up about genetics and how genes are expressed. Once you have a good baseline on how evolution works, examine hominid fossils from every angle. Try mapping them where they were found and in time.
Climate research from those time periods also really helps
