What are the downsides to sleeping every other night instead of every night? It's an extra 28 hours a week, basically a little over a full day of extra time.

I heard about some early computer programmers apparently adopting a 28-hour day with 6 days a week. Since they never went outside they didn't need to care about the natural day.
So they would sleep 6 times per week and apparently they found that easier to work with. But yours sounds a bit extreme
