The sensor inside is fixed to the flexible rubber that the ball is made of, so obviously the forces involved are going to get a little curved and bouncy, since that's what the material that the balls are made of do so players don't break their foot every time they kick it across the field.

During this entire peak, including the downward slope and the janky steps on it, the ball is in contact with his foot (i.e. the object that is causing the acceleration). The jank is caused by factors like momentum transfer along the ball during the kick causing deformation of its material (and therefore uneven acceleration), fluid dynamics of the gas inside the ball (causing pressure differentials and more deformation), even the physiology of the human leg/foot.
