On one hand you have to provide enough variety to stay interesting again and again without the player growing bore, on the other hand you also need to reign in the random chance enough so that the game isn't ruined. Minecraft's world gen for example is extremely complicated because of this.I think if I were to run something with this table I'd make it so that you only roll if a stat is less than 9 or higher than 12, or just cap it to 2 or 3 deformities but optionally more if you want a stat boost.

I feel like even in 5e you could have an abyssal or feral tiefling that has traits like what OP came up with and it wouldn't be out of place or anything. The stereotypical tieflings we have now tend to mostly all be asmodeus tiefling. Being a stereotypical devil person just has better mass appeal for people than being a horrific gremlin. If you do want to be a horrid monster though, I think it'd be fairly easily accepted by most groups.

The popular 5E and BG3 tiefling appearance just seems ridiculous and over the top, and more typical of the lowest grade fantasy art that hyper exaggerates physical traits. Tieflings were rare in previous editions, and their features seemed more grounded while still being fantastical, and they genuinely made them outcasts who faced prejudice and struggled with their own nature. Turning them into a standard option for players in order to cater to retards led to this cartoonish version of them that maximises surface level appeal like exotic sexy appearance but waters down the substance of their identity into nothing more serious than what flavour of ice cream to eat.

It pops up a lot where the angel is pure while the devil is "kinky" or "bicurious" at the very least or just flat out pansexual or something. Even in the westernization of one of my favorite series Wish by Clamp though angels and demons were "genderless" they assigned male pronouns to demons and female to angels and all the demon characters were known for sleeping with anything that moves damn near. It's a relatively common trope that angels represent pure Christian values and the bond between a man and a woman while demons and devils are typically promiscuous and possibly gay. And even from the fandom side, because the trend is so common, it's unsurprising that the LGBT community would be attracted to something that represents more freedom and rebellion against the "God fearing Christian" status quo.
