When you load your brush you want to wick most of the varnish away before hitting your model, and also be rinsing your brush between models or large parts of a model because it will start skinning on your brush faster due to the smaller amount in the bristles and could introduce texture that you don't want

Unlike spray cans which rely on toxic propellants, airbrush merely works off creating a vacuum and shooting out paint via air pressure so it isn't inherently toxic unless the thing you are spraying is toxic. Airbrush paints are just pre-thinned paints so you can just buy thinner and thin down the paints you already have. Bottles of primer and varnish will run you far less than spray cans.
