Minotaurs, ogres, trolls, ogrillions if you're feeling spicy. With that said I have never run a fantasy game that lasted more than 1 session, and my crew prefers science fiction. But if they one day feel like some sword and sorcery you know some big bullman with an axe is going to show up.My favourite of favourites would probably be an ogre though, they're big, dumb, and fart. Peak enemy as far as I'm concerned.

Mimics, by far.Living mimics that simply are monsters with mimicry of dungeon fixtures, construct mimics that are animated objects hidden as autonomous traps, shapeshifting mimics... Mimics as slimes, as arthropods, as spirits, as fungi. Mimics as threats, as wildlife, as NPCs...
I really like giants. They're so versatile. They can be a credible threat no matter the level, tailored for any sort of environment, they can be anywhere between wise and well spoken to unga bunga retards and the sheer spectacle of introducing one to the party is always a thrill at the table.

You can run each head as its own independent monster with a separate HP pool (but shared movement) and assign them different abilities and attacks.
