Why is wizard so fun to play in any tabletop setting?

Because magic lets the wizard do everything every other specialised character can do, often more. Fighting, opening locks, climbing walls, hiding, bending others to your whim, feats of strength, etc.
It also often lets you bypass boring problems and obstacles the DM night put in your way. desintigrating doors, animating or creating monsters to throw at the next monster, AoE spells to deal with trash mobs, charming chief NPCs, buffing the party members so that the next 'balanced' encounter is a walkover, etc. Great fun.

I played a Sorcerer during a Conan 2d20 campaign, and it was great fun. However, about halfway through, the campaign shifted from classic sword-and-sorcery to full-blown cosmic horror after the DM decided that my meddling with dark sciences had drawn the attention of the Outer Dark. My character eventually met his end on a bad roll, which caused a shadowy creature or tentacle to drag him into the darkness, leaving no trace behind.

The DM ruled that our group (including my new PC) had been tainted by their continued association with the Sorcerer, so Outer Dark/Lovecraftian themes became a major focus for the rest of the campaign.

Because they come with a variety of spells, which can all be considered separate "class features" or solutions to any given problem.
In contrast, the Warrior/Fighter/Whatever comes with 1-2 tricks at best and all authors on the matter are too afraid of handing out more liberally.
So a couple of levels down the line, the Wizard has ~20 different spells, while the Fighter has Power Attack and its million of upgrades and variations, which are fundamentally still Power Attack.

Most games arn't boring, but occasionally they can be, depending on the DM's and player's expectations and experiences. All players sometimes find what the DM presents in the adventure as boring at times. Long boring fights standing toe to toe and chipping away at each other, convulated quizes based on cultural references only the DM knows, the same plot points repeated over and over, long strings of encounters with no way to influence what the DM has preplanned for that evening, etc The game involves everyone and sometimes players want to influence the direction of the game through what their characters can do. If players have no input, you might as well bin the gaming part and have the DM read a novel to the group.

Systems like GURPS already do it in lots of ways. In the most foundational sense, GURPS applies a character point cost to those powers. You don't get anything for free. You want those powers, you have to afford them somehow. Whatever else there is about your character, you paid for those powers. You're not as beautiful or rich, you're not healthy, you're profoundly disabled, or *something*.
The problem with Free Powers™ being free is a D&Dism. The sooner you learn to stop tolerating all the problems of D&D, the happier you'll be.

Any character that has strong social or magical abilities is fun because solve problems very easily and perhaps creatively. I don't really play characters that aren't good in at least one of those two things.
