Trying to get some meat on my sci fi setting. You come in and ask a question, and I'll answer it as best as I can, or make an answer.

The Nations of the galaxy have achieved a level of technology that is divine. No natural process or fundamental law is beyond man's reach. Stars are playthings, megastructures are mass produced, causality, probability, and many other things are manipulated. Neo Babylon, the capital of the Sublime Defense Federation, is hosted entirely in the first man-made dimension. Each Nation’s grasp over their respective populace is ironclad in absolute belief, each a bastion of total unity in the name of their cause. The final regimes of history will rule until the end of all.

To quell its own members, the Federation both deploys its own warmachines and Painkillers, superhuman martial artists known as Tenfold Warriors that have come under the Federation's banner. Their surgical strikes keep the galaxy from tearing itself apart or the very universe from being altered by transcendent technology.

The Federation, unfortunately, exists for a reason beyond its own members. For even if the Federation's Nations warred among themselves with less constant frequency, the Entity would still exist. The overwhelming tide of sapient biomass that fills the universe completely and encircles this only known bastion of space, the Milky Way. For this purpose, the Federation has created Golems; machines only Tenfold Warriors are able to pilot without dying from the extreme stresses on the body piloting one demands.

Across the galaxy, Golems are known as invincible, nigh divine war machines employed by the Sublime Defense Federation that can push back the Entity. Beyond this, little actual information is shared beyond distant pictures and reports of success or failure. The truth is frightening. Those once immersed in pure ideological reason find themselves surrounded by superstition. Bizarre rules hang over a Golem Hangar like a guillotine blade, trained exorcists walk the halls, and the Golems themselves remain disassembled, chained, and sealed away until needed. The hangers Golems are housed in are blacksites that nothing ever leaves; none know this until they’re already there. Science has pushed into the deepest of boundaries. Something older than the universe has been invoked in Golems.

Calamity and strange occurrences wither the world, comets shoot unceasing, men go mad and claim to be prophets of old reborn, once pristine rivers are strangely stained with iron. The Federation shifts with the waning tide of fortune. While normally led by a council of representatives sent by the 9 Major Nations, a temporary leader has been unanimously elected. The King of Neo Babylon is a man of immense skill in all fields, and possessed of immense charisma, raining fire in war and conjuring miracles of statecraft. Golems shall be made in greater numbers than ever before, the legions of machines walk to the edge of the world. The kings of the galaxy heed his call or suffer the wrath of their fellows, though some Nations see far fairer treatment than others. Let those with wisdom and understanding see the signs of the times.

Okay so it's a mecha setting where kung fu ideologue cyborgs pilot god-machines against the infinite meat-tide, got it.

So I'm assuming these "man-made dimensions" have to be anchored to reality in some way, else these zealous nations would've long since withdrawn into paradises of their own devising and slammed the doors shut behind them even without the threat of this Entity, no?

Correct, but there's also three other factors at play.
One, only the Federation itself holds the technology required to make such a dimension, and like Golems, has had complete success in guarding the blueprints from its members.
Two, The requirements of many nation's causes. Every nation wants to force their way on everyone else, and many need to alter reality as part of their cause. For example, the Chronoclasts, a minor nation, want to annihilate causality to prevent anyone from dying. They could test the how in a pocket dimension, but the goal still must be applied to everyone.
Three, pride. Retreating so completely while there's still a chance to force reality to their cause would be like admitting a weakness in their ways. So while they would set up a pocket dimension if they could, sealing themselves away would be off the table for now.

So what's life like for the ordinary citizen of the Federation? Does it differ from dimension to dimension?

People do not really live in Neo Babylon, it's more akin to a massive government building as a dimension. It may have places to eat and relax, but these are all just temporary accommodations. Those who work in Neo Babylon, high ranking Federation figures, will enter through one of the city dimension's grand gates and into the orange void, where the dimension will assemble a path to bring them to their dimension. The council, the King, and his closest underling however do reside there permanently.

Other Federation workers have a far more normal life. In most cases, they reside at a Federation station, generally a spaceborne structure that acts as a neutral zone for all nations. The main example being any Federation military base.

As for a regular life, people live in untold wealth and luxury. The average abode can have miles of square footage, and is in fact one entire, responsive machine. A Servant Automaton that shifts and rebuilds to its owner's desires, making chairs where they wish to sit and other things. Lesser Servant Automatons work at every beck and call. While Automatons can perform all lesser tasks, they are mindless, so work still exists. People labor cerebrally, not physically, with many acting as overseers of industry, artisans, or military, education.

Money, for all intents and purposes, has ceased to exist. Only one Nation, the Eternal Dance, remains capitalistic though their form is a far cry from the past's. Life will often vary by nation, of course. The Progression of the Dawn, one of the Major Nation, has its citizens achieve party rank by self limitation, with the highest rank BLACK members, being allowed only one bowl of soup per month, made to commute on foot through a wilderness filled with wildlife specially bred to be dangerous, only allowed to use a non dominant hand, can only sit for 2 hours per day, and wear weights across their body at all times.

How much bathtub antimatter can one man make in an hour? And what's to stop someone from using Dimensional fuckery to completely bypass the Entity? Does it extend not just around the known space surrounding the Milky Way but to the very edges of the constantly expanding universe itself?

Probably a decent amount? There's not going to be much use in making it though since you'd A, been seen doing that, and B you'd get folded by a Warrior Automaton before you even realize its coming to stop you once you try doing anything with it. Plus loyalty to their Nation is so ingrained in people the thought of doing something like that to harm their own country would be absurd

Yes, but its very limited in duration and availability. The Chronoclasts are the only ones to really specialize in it, and while they have gadgets that can rewind your death(provided you prime it before hand), and other similar things but they can't affect much at once. If a Nation could back in any reasonable capacity, they 100% would have gone to the beginning of the universe to completely rewrite reality.
