So I've been writing and writing, got world a lore and everything but I can't decide on a what system and/or ruleset use. Labyrinthus caught me attention, has anyone here given it a try? How is it?

It's one of the most played systems here so, that would say something about it. If you like to come up with things and like the flexibility of the random generation it's pretty good. Takes some time to lean but it also has the pre-made Adventures which sort of teach you how to play. Plus the author is pretty fast at fixing things or is always welcoming towards suggestions or homebrews

So how do you turn professions/classes into lewd types with different effects? Lewd stuff is lesser than wrestling.
I mean do you do it the stupid way and relegate tit size, cock size, thrusting styles and positions only to certain classes, greatly undermining the other? like only priest/monk can heal and no one else? or make it more balanced, less WoW-like and let other classes heal as well in different methods? Problem is how do you translate that to sex/wrestling? do you allow missionary for only 1-2 classes or everyone gets the basic positions? how do you make missionary different for everyone despite it being the same ability?

Monk, acrobat and similar classes get into weird contortion positions.
Whatever's a "controller" class ("Binder" is one in D&D 4e, fittingly enough) gets to employ bondage (and potentially psychological domination).
Summoners, hunters and beast masters will totally try to make their opponents into (sex) pets.
Machinists and other crafters get to create and employ semi-automated restraining contraptions (look up "Devious Devices").
Clerics will try their best for missionary positions for the sole purpose of reproduction and get a bonus for it.

I don't, sorry! I like coming up with creative (and often personal) tickle methods, which is why the actions are left ambiguous.
The original torment scale was ticking based though, so guess I can supply that:

Level 1: No ticklishness. The subject barely reacts to the tickle attempt. They won't even crack a smile.
Level 2: Awareness. The subject will feel the tickle sensation, but won't be perturbed by it. If restrained, this may cause an unfounded surge of confidence that they can withstand the ordeal.
Level 3: Twitching. The subject's flesh reacts to the tickling, muscles flinching ever so slightly, while their demeanor remains calm and composed.
Level 4: Giggles. The subject begins to experience the laugh response, though limited to chuckling and other softer verbal responses. May elicit the occasional jerk reflex. Most subjects consider this "playful tickling".
Level 5: Squirming. Subject actively pursues escape from the source of tickling. If restrained, cold fear and a panic response may occur. This is often accompanied by denial: "This isn't ticklish, stop it, it's not working!"

Level 6: Full laughter. Verbal responses are fully vocalized, peals of laughter or howls to stop. Without restraints, continuing the treatment will be impossible. At this stage, the subject will be unable to avoid the truth of how ticklish they are. This may invoke a sense of shame, humiliation, or anger.
Level 7: Torment. The tickling reaches an overwhelming stage, to the point that most would consider cruel. Thrashing and light perspiration may occur. The subject's psyche begins to break down here, leading to earnest bargaining or pleading. Most interrogations will stop here.
