How would you make barbarians more interesting than just having them be blind rage berserker guys?

Well when they're actually raging, it probably should be blind rage. Outside of that, they could be the complete opposite of angry. I had a player with a 200 year old dwarven barbarian who was effectively the mentor/father figure of a party composed of a little orphan elemental girl, a half elf thief with mommy issues, and a town guard who needed a good sparring partner.

1st ed aD&D had some good ideas in Unearthed Arcana.
Minimum stats needed (Str, Con, Dex)
Stealth skills
Outdoor survival skills
Some tracking and trap setting skills
Climbing and leaping skills
Slight chance of detecting magic, plus a supersticious fear/hatred of magic use and items.
Primitive weapon and armour use.
Culture/tribe specific skills, such as riding. running, boat handling, etc
At high levels, has the ability to raise up a horde of barbarians for raids.

By making Barbarians a culture/race rather than a class. Berserker, Ranger, Shaman, Druid and witch should be the classes generally associated with this culture/race.

Rage is what we associate with Barbarians in gaming. Different for the sake of different sucks. If you don't have a reason to change Barbarians except "to make them interesting?" Don't fucking change them. Changes aren't interesting in and of themselves. They're just you putting work on other people for no purpose. You should fuck off.

you're not wrong, but if you de-contextualized every class in 5E then it wouldn't really be 5E anymore, and at that point you might as well just play a better fantasy system

Every other class is already decontextualized in D&D. Only the barbarian retains it's cultural context for some stupid reason. The paladin is no longer the idealized "shining knight," clerics are not locked to bludgeoning weapons, the ranger devolved from non-Aragorn into a two weapon fighting wilderness warrior, the bard went from a fighter/thief/druid prestige class to magical musician joats, warlocks suffer no risks from making pacts with dangerous entities, etc. Saying that replacing Barbarians with Berserkers would stop the game from being D&D showcases a massive lack of understanding of D&D.

First, you remove the explicit implication that all barbarians are loincloth wearing retards.

Second, you decouple "rage" from being tied exclusively to some power or specific identity. Rage is rage no matter what causes it.

Third, you open the floor for different flavored Prc/Subclasses. Perhaps your rage is just because your a homocidal monster who enjoys being in the blender. Perhaps you're rage is a result of a supernatural affliction. Perhaps you're literally possessed and the rage is whatever that thing is trying to assert control.

But hey, at least being illiterate is no longer a class ability.
