Now it might, POSSIBLY, make them 100% aware that they are altered and unable to stop their new behaviors no matter how hard their inner thoughts are screaming at them to stop.In the event this completely hypothetical situation occurs, what kind of repercussions might one expect from being the cause of such an event?

There is never enough resources to go around, your scenario is compelling them NOT to act in thier own self interest for thier own survival, and they are all being emotionally overwhelmed by this sudden reversal all at once, few would be in a position to think things through and instead would immediately go full lemming to cull the overpopulation to sustainable levels but as there is no organizing they will likely overdo it.Also the survivors won't eat the corpses as that would be unaltered skaven behavior.

He knows there is no agriculture, cannibalism is now forbidden, raiding is now forbidden, he owns nothing he can use to trade with, and that there are better rats than himself that deserve priority in what stockpiles of non-rat jerky the skaven keep. Thier new forced perspective means no more skaven racism, those who survive the mass lemming suicide event aren't thinking about the skaven's collective survival but of all life, and if other forms of life learned how to use the warpstone to alter thier race in the same way it would lead to more lemming events. For the good of all the survivors would avoid all contact with other races(by suicide if necessary), try to seal off skavenblight, try to dispose of as much warpstone as possible, etc. Their eternal burden as a race will be to try to erase themselves lest another race learn what is possible and exploit this lore for thier own gain.
