Post-pubescents are difficult to differentiate. It more comes down to level of confidence and personality than body type, as some people will have a 14 year old be extremely curvy and developed and others might have an 18 year old be short and thin. While I can't speak for everyone, the general appeal of a JC or JK is that they are for practical purposes an adult women, but less jaded and worn out physically. Less used and abused by life.

Many people mistakenly think that loli means short and flat, but comparing to actual lolicon characters shows the difference. For example, Megumin from Konosuba exhibits a change in character design in the novels going from no hips and no curves to an obviously more mature and developed body while still being very lithe. Progression from definitely a "loli" in the age 12 bracket to a 14 year old in the JC bracket. "Proper" loli designs you'd find in something like Medalist. Good artists also tend to use proportion well, if they are 7 heads tall then they aren't really a loli but a young woman. The attached image should make this more clear.

As this pertains to vampires, a child and a young woman would have very different hunting strategies I think, as the latter probably focuses more on hunting men while the former can easily lure in women as well.
