We're running a semi-grounded campaign with the standard vaguely 14th century equipment and I want to sketch up some generic cards for bandits/highwaymen
what sorts of helmets should they have? I'd imagine things like kettle helmets/eisenhuts/cervellieres/other cheap simple options as opposed to the fancier barbutes and bascinets of the "time"

Use whatever the common soldiers in the area or nearby regions would have normally. Any equipment they have is likely from their own service or taken from those that served.

Mix and match of whatever is cheapest, looted or ancient.
Leader with the coolest helmet.
Could do bandits supplied by a neighbouring rival to add larger scale conflict between families or whoever.

Kettles and similar "iron hat" designs are some of the cheapest to make, so I'd go with that if not captured gear from local forces.

Bascinets are fancy? They're simpler than that kettle which you're identified as simple. pic related. Don't confuse them with a visored bascinets which are a mid-14th c. development.

Don't forget that people would use mail coifs and aventails, and leather.

A lot of bandits in the medieval period were mostly deserting soldiers from whatever armies were on campaign, so no better equipped than them (thought they might leave some gear behind to make for a quicker escape from camp).

soldiers fed themselves by foraging (stealing from farmers) so they had plenty of chances to leave camp without attracting notice (especially if they were foraging on the march and weren't actually in a camp)

Think about why they’ve turned to banditry and arm them accordingly. Are they mercenaries between jobs or whose employer didn’t pay them? Arm them as you would any other professional soldiers. Are they soldiers trapped in a foreign land after an unsuccessful campaign? Have them keep the gear they used on said campaign (watch this: https://www.youtube.com/watch?v=BBrGYGk4Q-Y [Open] ). Are they desperate peasants trying to get by in difficult times? Most probably wouldn’t have helmets but those of them who’ve previously been levied (or have older relatives who have been) might still have their old gear. Additionally, anything they’ve looted should be used. If they’ve managed to kill a knight, one of them should be wearing his bascinet

To add on to this, think about who their primary target is. Are they robbing traveling noblemen Robin Hood style? Theyve probably acquired a hefy sum of gold and stolen armor. Are they robbing peasants and farmers? Then theyre probably dirt poor and having nothing more than what they started with
