You want gloss to cover your model for protection and then a matte layer.
A gloss cover makes it hard to miss where your mini is not varnished and a matte layer to undo the gloss effect for extra protection.

I've wasted money too on this hobby that could have been better spent elsewhere.

My biggest mistake in this hobby was not getting into Warhammer but spending money on "practice minis" when I should have spent that money on the Warhammer models I genuinely wanted to paint.

Why do I do this to myself? I think I’m overwhelming myself and unsure where to start so I’m just planning out my next army to occupy the void. I started with my Talos/Cronos, but the inspiration hasn’t hit yet. I think it sounds like a problem of obnoxious theorycrafters then.

Mystery can make stuff more interesting alongside making it a nice "bottomless well" to draw out something to sell minis in the 40k universe.
If the HH was kept mysterious it would have been an endless well to draw out new warmachines drawn from it while the breadcrumbs about it being an apocalyptic war would have made it more enticing and descriptions of the carnage and chaos levels could be waved off as "worse than you can all imagine."

The best example I can think of in mystery being done right is from the vidya Half Life's Beta and the Seven Hour War.

I think the Unification Wars still has this mystery appeal in the 40k universe and it is best left unexplored.

You're right about the saturnine terminators somewhat.
They're more like a fanservice to an oldhammer era terminator space marine design and then fanservice to grogs and 'fakegrogs' with it's naming. The Horus Heresy really is grog and fakegrog fanservice since it's inception if I'm being honest.
I don't even know where saturnine came from and I'm not sure if it even started with GW.

Whichever detachment you want. If you're gonna play just the combat patrol list there's probably rules just for that included in the box you bought. Just explain to someone that it's your first game and they'll usually be good to run you through it.

Detachments are what you build your army around, they'll usually focus around a special rule that buffs certain units or gives another rule to play around with.
It's also where you get enhancements from for your characters, and where you get your faction specific stratagems.
Generally a good way to look at it will be to look at the units you like and find a detachment that works well with them, also they're updating army building in 11th so you can take multiple detachments so don't worry too much about locking yourself into a box.
