What's a good system to use when it comes to ship/air/land combat vehicles? Ones where maneuvering, dog fights, and vehicle damage comes into play.

Been wanting to run a star fox themed game for a while to be a warcrimes simulator, but none of the mainstream games I've spotted really cover the vehicle aspect as much as I'd like.

If you score at least a 7 on the 'tismo-meter you could try Cyberpunk 2020's Maximum Metal supplements.

and if you score 9+, there's GURPS: Vehicles

Flying Circus comes to mind. It is PbtA, but the air combat uses a less connected subsystem so you could probably just carve that out if you wanted

I don't remember if Warbirds had a scifi bit. Might start looking there.
The Few is ww2 battle for britan narrative game but would convert to scifi easily if you want a story game.
