Why aren't there more(or any at all) games about being a knight at a medieval tournament?

There was a GW minigame published in WD, there's Pendragon, an RPG dedicated to all things chivalrous, and you can set up a tournament session or mini arc with whatever other system you want. Do you really need more?
Honestly a game dedicated to just that is probably more boardgame material.

Full Tilt (old White Dwarf game about Bretonnian jousting from the 90s, recently republished by GW)
Half Tilt (pastiche of Full Tilt, but with halflings and more fantasy stuff)
Hairfoot Jousting (similar idea, different rules)
I'm pretty sure that there was a game from the 70s that was kind of in the same wheelhouse as Chainmail, but just focused on jousts
And there's a couple of print and play games meant to use whatever tokens you have lying around and a sheet with distances and speed charts.

According to BGG there are no less than 57 released products under the jousting/tournament theme. Even discounting various expansions and stuff published before 1990, you still have ~25 jousting based boardgames. So I don't really understand what you're talking about. As you yourself noted, it's clearly a concept that can very easily be adapted into a board game format.

Because that's more of a board game than an RPG, but even for a board game you have three paths:
>Unplayable historical autism that's so accurate and bloated by the time you have it set up, nobody sane wants to play anymore
>Gimmicky game with overpriced and easily broken physical props
>Lazy game with effect cards and basic dice that satisfies nobody

As for RPGs, well, those are more things you'd do as part of a larger campaign and/or a subsystem than the focus of a campaign or a full system.
