Maybe do some scuba diving? Kerama islands are a location of choice, it's about 1 hour by ferry from Naha. Bonus point, if you fly shortly after diving, you may die.

If you like aquariums the one on the north side of the island is excellent, about a 90 minute cab ride with some great views of the ocean. Also a Ryukyuan model village if you care about that.
If you want to stay around Naha the Naminoue beach area is pretty pleasant, and there's a Shinto shrine right nearby.
The downtown area has some fun bars and restaurants but also a lot of the usual tourist junk. Don't sleep on the weird Americanized food, not all of it is "good" but it's very unique.
