One that I saw a lot was the staff taking 20+ minutes to bring you your change; they know a certain number of tourists are in a rush or will forget about it, and they'll keep your $10-15 in change. I waited 35 minutes one time for them to bring me my change and 40 minutes on another occasion; 20 minutes was common though. If you go to a restaurant with locals, they'll order food in Tagalog without approving it with you, and they'll bring $40+ worth of food to the table all at once and the Filipinos will refuse to pay & they'll say that you have to pay or they're calling the police on you.
