I want to do a tour of the Pyrenees. Starting in the Basque country or maybe even farther west in Portugal/Galicia, make my way into the mountains and visit the massive world class spa in Andorra, do some hiking, come down into Catalonia, and finish with southern France and maybe an afternoon in Monaco to say I went. Anything I should see/avoid along this itinerary?

I have only been on the Spanish side but Basque country should not be missed. Bilbao is a nice enough city but the countryside out there is unreal, enjoy the food

Monaco isnt that great but you should stop by Eze and Menton which are near.
While you are in the Pyrenees I suggest you try canyoning, lots of great spots there both side of the border
