There are many things to cover, so I’ll throw in the caveat that these things vary between the level of restaurant involved, geography, who the head chef is and of course the management.First of all a lot of the more extreme environments have been toned down since the 90s/ early 2000s. Back then the shit you saw from some of Ramsay and White’s were not unusual in the business, especially at the high levels. It was even worse when they were young, like straight up violence was accepted. Old school French chefs were maniacs. That’s just how things were and no one bitched, they either stayed and took it or left. - Today it’s less extreme but the business is still toxic and this is also the case at the top. Why? Because the profit margins are very slim within that business, competition is fierce, prestige and reputation can determine a restaurant’s success or failure. The nitpicking can be extreme and even to this day the people coming up have to accept some level of screaming and bullying. - Why do they accept it? Because your career is dead in the water at the top if you are perceived as a snitch/pussy who can’t handle the heat in the kitchen. You have to be tough. They work their asses off because it is only at the high levels that chefs can make a lot of money. That also comes with insane hours. Stimulants are very, very common. I’ve seen the eyes of chefs who have just finished their 6th 12 hour shift in a row. They all dream of owning their own place, making fantastic food and making a nice nut in the process.

Everyone else was mostly chill or managed to contain their stress. High stress environment tends to breed that kind of behaviour, yet for some reason in the restaurant business it's accepted.
