They're probably angle limited to not be able to turn behind themselves anyway, making it easier to pick independent targets. If the ship needs to broadside another capital ship with all eight guns it can face the target and nose down.
The elevated middle section is done in the name of floor space and the ship's top-down profile. While there's immense value in keeping one axis flat because it presents the smallest possible target at certain angles, building up like that instead of spreading the ship further outwards helps to keep its worst-case profile smaller, which is just as if not more important in large engagements, because those are the angles where you'll be taking most of your damage from.
All in all it's a decent design and would probably fare pretty well in combat.

Star Wars ships depend on shields for the most part. Heavy turbolasers can slag a planet, armor doesn't last long. The bridge design is usually located at the nexus of all the overlapping deflector shields. The shields aren't a giant sphere the way they are in Star Trek and other Scifi franchises. They are individual curved fields (literally like shields) and a ship has multiple emitters that work to either form that bubble of the protection, or layer them in a few specific directions. So having ship citadel makes sense and isn't the vulnerability you think it is. It also allows for the sensitive systems to be distributed away from each other to prevent concentrated firepower at any one point. Yes, losing the bridge is pretty devastating but all ships do have secondary bridges located elsewhere that could still manage the ship if everything else is online, albeit much more inefficiency and all the senior officers are dead. But if you had engineering, command and control, targeting, sensors, communications and life support all consolidated in just one section that would be too easily a vulnerability to be targeted. So each of those is often located as physically far away from each other in the design to prevent a single point of failure being targeted by the adversary.

Yes, everyone points to the Executor's destruction at Death Star II but that was due to Piett wanting to physically shield the Emperor from potentially the concentrated firepower of the Rebel fleet... and subsequently that is exactly what they did. And he was only forced to be put in that position by the Emperor's arrogant plan. And even then, the A wings only got through because of luck, suicidal motivation, and the SSD's orientation (which again was because of forced circumstance). The design is not really at fault at all.

One could imagine that they were designed with several assumptions in mind about the coming war that quickly turned out to be wrong, and the replacement Venators were rushed into production instead. Like, say, the RN battlecruisers which turned out to be glass cannons in major fleet battles, or the Panzer 3 which was practically obsolete the minute it rolled off the production line.

'Realistic' space warfare can be really fucking cool if it is depicted well, but it takes smart writing, pacing etc. It's more akin to submarine warfare than surface naval warfare, so it's about stealth, tension etc.

Broadsides and fighter aircraft analogies in space can be really cool too. Just depends on the tone and the level of realism you are trying to depict as for which works in which franchise.

Lasers don't actually have that decent range, although of course you could have insane sci-fi lasers with massive power. More likely before you are in range for lasers, you have been torn apart by long range missiles and drones, and at closer range a railgun might make more sense. Lasers are just underpowered compared to nuclear explosions or matter travelling at relativistic speeds, until you have the aforementioned crazy power level lasers, at which point it's not really realistic anymore.

Have fun seeing the enemy when they are thousands of kilometers away, their ship is black and they are running in dark mode, not doing burns or anything. Your only hope is active sensors. Having literal windows just makes no sense. Like I say, it would be more like submarine warfare, quiet and stealthy until either you get a ping from the enemy doing some action, or actively ping with your own sensors to try and find them.
