A person's personality is built out of their experiences and memories; the wish can't just swap things around to make her be the version that he wishes for, so it creates a personality from scratch where the demands of the wish are the most important aspects, with the bare minimum tossed in to allow the personality to function, and then sent it in to Nikki. That's why it's not quite right and why real Nikki fights to get messages out.
