It was shot once, for black and white, and then they added color afterwards but in a way that made it look like old Technicolor which is what they were going for. It's supposed to look like a black and white film that was colorized after, like Casablanca, which everyone hated when they did that but it looks good here because it's specifically trying to emulate that.
