If Obi Wan and Luke's father were both Jedi who fought in the Clone Wars, then it all still happened mere decades ago. Even if it was 40 or 50 years ago instead of 19, that guy's lines still wouldn't make any sense. It'd be like thinking the USSR was a myth because you were born after its collapse even though everyone in your parents' generation remembers it vividly.

In Episode I, Anakin only knows of them because he's heard stories from space pirates and traders that happen by Watto's shop, and the same is true for Watto. And you also have to consider that their order was completely eradicated in one fell swoop by a Sith Lord who had basically mind control over the entire government, outlawed, scrubbed from the history books and their temple burned to the ground. Consider all that and Admiral Motti calling the Force an ancient religion (it literally is) that's a bunch of bullshit (not like the Sith were advertising their powers) isn't so farfetched after 2 decades of hardcore censorship and erasure.

The PT retconned nothing because there was nothing to retcon tat took place before the OT.
