It's because we have fight scenes in everything now and the set up for modern fighter themed films is real boring. Being at it's very core UFC isn't particularly interesting to watch cinematic wise and doesn't transfer over to film well. So why bother to limit yourself to fighter themed story when you can make an all around action film?

What I would say it fits into are fights that feel like snuff films. The Snuff Kungfu genre where you feel like the people are real and really dying in front of you, rather than experiencing honorable combat or emotional combat between rivals.Ong-Bak, Brawl in Cell Block 99, A Company Man some of the more grim and mechanical parts of John Wick where you just see him lock up with a man and shoot his head and he drops. The Raid might be the #1 in that brutal bloody genre but its not #1 overall as a martial arts film.
