I'd expect the default replicator settings to be geared for mass market appeal and safety. "A replicated meal for everyone is a meal for no one" kind of idea. For example, you order a cheeseburger but it's some low fat hippie version BS and you have to bypass the safety protocols to get a proper one made.

When you use the replicator it’s the literal exact same plate of food every time. Even if the template was made by a world-class chef, you would get bored of it after a while. Food cooked by hand is unique, each time you make it there are variations in the texture and flavor.

It's probably similar to video and audio files. There would be different resolutions and bitrates. Most people who remember a replicated steak probably ate the the same 360p mono file from 30 years ago when there might be a 4k HDR remaster on high def replicators more recently.

Further thoughts:
It’s like listening to the same song again and again. It could be your favorite song, but your brain starts to go over it with a fine-toothed comb notice details and minor goofs you otherwise wouldn’t notice. Like imagine there’s a single piece of onion that isn’t diced as finely as the others, or the steak has a slightly fatty/gristly part on one spot toward the end, or the sauce runs onto the plate and mixes with another thing in one spot, literally every single time. It would drive you mad eventually.

Replicated food is made in a way that's healthier for you than normal food to the point that Troi in TNG needed to use a command override to get a normal ice cream sundae out of a replicator.
It probably tastes like the "diet" version of food, or versions of food that avoids allergens like gluten.

Doesn't that only happen once with Darkling or whatever? I can't think of any other time the Doctor becomes evil. In Equinox, they disable his ethical subroutines, suppose that counts. But two times, seems like it happened to Data more.
