The EU started before Star Wars even came out. Splinter in the Mind's Eye was Lucas' plan for the sequel in case the movie bombed.

Ever since then the stories have gone in every direction imaginable. There's some classics like the Thrawn trilogies, but also some turkeys like The Crystal Star which was based on a canceled outline for a Star Trek novel.

Most everything fell somewhere in the middle, but every generic scifi trope you can think of was utilized somewhere. At the time, when I was a kid, I thought it was a neat exploration of how Star Wars can branch out and rise to the challenge of new types of narrative and tone. I was particularly self-conscious of Star Wars being too nerdy and kid-friendly. But looking back now, a lot of it was kind if pointless, meandering, not very much in the spirit of Star Wars... But when it was, it was awesome.

They have to path around them if they don't want to die, so they essentially pinball themselves around the galaxy and map out the safe routes to most of the places they want to go, these routes don't even remain static so they have to be remapped every so often. Since celestial bodies become denser around the core, plotting courses to the other side is an exercise in frustration. They either deal with it and slowly make their way through coreward space, or take a long trip around to the outer rim where celestial bodies aren't as dense.

Even after all this, they have to bring back the charted courses, and people going to the Unknown Regions often don't return.

If there is not an obvious reason to go there like resources, then nobody's going to fund expeditions. Without proper routes to follow you can't just hyperspace into deep space and hope for the best. If by some miracle you don't hit something, then your stranded in deep space shit out of luck.
It's like with our universe, if there was something out in space worth mining, harvesting, or hot alien babes there'd be plenty of spending on space exploration. Since as far as we can tell, there isn't anything out there worth the trillions of dollars it would take to get there it's just a frivolous vanity project.
