I didn't mind her as much in the earlier seasons, the Christmas episode with her and Mark's parents is one of the high points of the series imo.
What bothers me the most is in the last season she tells Mark she left him mostly because they were "stagnating" and staying indoors doing nothing all the time. But if you watch the earlier seasons it is literally Mark trying to get her to go with him to the Naval Museum or other places and she is like "lol no let's stay in and watch Prison Break while drinking mid shelf scotch!"

I forgot to add, that even if she gets more annoying as the show goes on, I think her character arc and behavior is actually very realistically done for those "Wow, she's a nerd like me" persona type women. Who almost all the time turn out to just be surface level nerds and not actually have it in common with you or be genuinely interested in stuff/hobbies like that.

The show wasn't written by them, it's mostly two other guys, Armstong and Bain, that do the writing here. Mitchell and Webb get credited under the "additional material contributed by cast and crew" bit for this show.

Dobby is a great character in season 5. That season ends with her starting a relationship with Gerard. Nice, finished storyline. Then suddenly in season 6 that never happened. From then on Dobby has a different personality every season, and it's multiple seasons of the same "Mark and Dobby are together but they don't enjoy each other's company and never really do anything together so that's a problem" storyline over and over again. Theoretically that could be interesting, but they already did that in a far more sophisticated manner with Mark and Sophie, and with Dobby it's clear the writers just had no idea what to do with her so they tried whatever. Why were they so dedicated to this one minor character?

That being said, as much as I love Peep Show, the final season was terrible outside of a tiny handful of actual funny stuff. Especially when it's made years after, but is only six months or something in the show's timeline. It's really bad.
But you could stop after season 5 of the original run too if you ask me. Season 1-5 are pure gold.

Yeah, that's why I think she would have been better as a guest character and not turn into one of the main ones. She could have been the focal point in two episodes, one where Marc thinks she's the one (where it ends with Gerard looking at them through the pub window (one of the best ending scenes if you ask me)) and then one where she ends up with Gerard to end her story on the show. They could have done her entire season 5 story in two episodes.

Robert Webb had a clear bald spot way back in Bruiser, then it's like he mysteriously un-balded for everything else. the sketch in That Mitchell & Webb Look where David Mitchell is secretly bald and wearing a wig...that one must have felt awkward (those two didn't write all the sketches).
