The bevor wasn't so tight you couldn't turn a bit, not full range of motion though. Some were hinged and could be pulled down.
Jousting helmets were bolted to the hauberk however.

Dont know about cold protection but everything would be oiled to protect against rust.
Under the armor there would be a padded jacket to protect against chaffing and blunt force.

Samurai used hammers and had a specialised anti-armor weapon called the Kanabo.
They'd try either a spear, Yari, or this.
Men-at-Arms trained in grappling and wrestling to, taking their openent to the ground, locking a limb, and getting their poignard into a gap in the armor.
They would have been evenly matched.
