She specifically was a single mother who was psychologically damaged with rock-bottom low self esteem due to her physically abusive ex-husband so it makes sense she looks like that in season 1. Her life literally becomes easier in every way after Dexter so makes sense she starts taking care of herself again and looking better. She also would possibly feel the need to keep looking good because Dexter was seduced by another sexy woman.
