can someone explain to me what you even get with Plex Premium? i briefly looked into it but decided to find something else when they forced me to make an account just to set up a local server. but if you pay for it, what does it do?

Not sure if it's still the same, but Kodi used to come pretty barebones..and you'd download different plug-ins to get more/better features. but every Kodi update would end up breaking some plug-ins, and you'd have to do without until the dev updated it. Plenty of cool ones would get abandoned. Plex was more idiot proof at the cost of customization.
