I like to get a package of cocktail tomatoes from kroger, slice them in half, toss them in olive oil and S&P, and put two heads of garlic with their tops cut off with them, then put all that in a baking dish and roast them for about an hour. Then I squeeze the garlic bulbs out of the skins into a mason jar with the roast tomatoes and hit them with a stick blender. It makes a great little sauce to go in any dish or for dipping. I put it in mexican rice or as a dip for fried potatoes or fish.
