Because the original scene is just a brief anecdote about his fleet sailing into a trap and Odysseus alone deciding not to (but not stopping the rest of his fleet) because he's so clever and cunning he guesses it might be a trap, then watches with horror as his men are all hunted like tuna by giant sicilian gigachads. It really only exists as a form of cast-culling because it's the point where Odysseus' fleet gets narrowed from 12 ships down to 1 so the rest of the novel can play out with just him and his crew.

The original scene is too passive and too simple. It would have been a minute or two of footage of body horror and closeups of Matt Damon looking vaguely concerned. Shit like this is what makes the Odyssey so hard to adapt, because something that takes multiple pages of poetry can end up just translating to a minute of screentime and needs to be 'reimagined' somehow to work as a movie scene.

IMAX uses 3x the area of 70mm, so assuming the same physical dimensions of the film reels, they would have been able to shoot 9 minutes in 70mm.

It is mostly technical wankery for the simple reason that there are relatively few true IMAX cinemas, there are relatively few digital cinemas above 4K, and there are virtually no home screen or delivery systems above 4K. At 4K the difference between IMAX and 70mm is going to be pretty small, a bit more if you present the entire 4:3 frame like on Zack Snyder's Justice League.

So you're incurring a huge additional cost in virtually every step of the film production, as well as introducing limitations like the size of the camera and the frequent reloading, for a premium presentation that only a tiny fraction of the moviegoers around the world are ever going to be able to take advantage of.
