The quality of the fish is obviously a factor but there's really no massive difference in making sushi on pro level. You learn to cut fine pieces of fish and learn how to compile it onto the rice. It's mostly the good fish that makes the difference, not the autistic theatrics.

There are several classical methods of subterfuge, or you can create your own. That’s risky, but younger Taishos often appreciate it. I feel like Jiro would appreciate you learning the cannon.By the way. Once you have successfully tipped (I’d say 30% seems right for the first time), you will not be an open door diner anymore. As a friend of the Taisho, a closed door diner, you will now have access to the toro.That’s why it’s so important to tip the first time. It would have to be a very modern leaning Taisho indeed who accepted any tip from you on your second visit or afterwards.

Sushi elitism has a limit. The quality of sushi you get from a place thats like 10-30 bucks pp to 50-80 bucks pp is very noticeable. 50 to 100-150 is noticeable as well but not that noticeableEverything above that including the 500/1000+ that places like Jiro charge is just for rich snobs to gloat.
