Slow cinema is actually slow shit with an average length of a continuations shot being at least 3 minutes, with camera usually not moving too, although someone like Bela Tarr is an exception. Asians love slow cinema the most, Tsai Ming-liang, Apichatpong Weerasethakul, Lav Diaz, certain Hong Sang Soo and Edward Yang movies. Euro slow cinema includes Albert Serra, Pedro Costa, already mentioned Bela Tarr, Michelangelo Frammartino. It's all vague because it's always gonna be vague with definitions (ever seen music genre definition battles) and you can see the vagueness in the fact that people can't agree on when slow cinema started. It exploded in the 00s, but there are earlier examples. Maybe OP actually watched Jeanne Dielman instead of Refn, which would make even more sense why he is so assblasted because it's a completely different thing from other mentioned directors. Most slow cinema is not usually about capturing the ridiculously mundane that way, it's usually adjacent to surreal imagery / magical realism, or at least capturing some sort of natural beauty (like Frammartino). Jeanne Dielman is more proto-Haneke.
Influences of all of this shit obviously seep into a lot of other things, already mentioned Refn who likely was influenced by asian slow cinema, but if you actually watch even his slowest movies after watching someone like Tsai Ming-liang they will seem like Hollywood blockbusters.
The appeal of all if this is really the same as the appeal of ambient music. It gets you into a specific mood for a period of time, not necessarily relaxing, but a sort of melancholy. It's not a fucking spiritual experience, but OP is inventing a strawman based on not being able to lay down Reddit or Letterboxd review section. People tend to exaggerate shit. Someone who never had a spiritual experience can in fact confuse a strong mood they never got into before for it.

Well here's someone coming in and proving my point. None of these are actually commonly considered slow cinema, but people do tend to argue here, because a minority of unfamiliar people do in fact view those people as slow cinema. Bresson is the closest to what we're talking about, and is an influence on a lot of slow cinema directors, but he has a calculated and cold detached feeling to his work that goes in opposite to often heightened and surreal reality of slow cinema filmmakers that's meant to be very immersive rather than detached.
Tarkovsky moves his camera too much and features quite a lot of text, while slow cinema is usually very silent, at least on average (Lav Diaz has plenty of text but it often gets compensated by the text being scattered across extreme 5+ hour runtimes). Nuri Bilge Ceylan is a Tark protege, and even more talkative than Tark, lots of dialogue, and his movies often feature too much plot / character work.
